Ingredients for Cassava Fritters:

Fritter dough:

  • 1.5 lbs (700g) cooked cassava (mashed);
  • 1/4 cup (50g) butter;
  • 2 tablespoons grated onion;
  • 1 teaspoon minced garlic;
  • 1/2 cup (70g) all-purpose flour;
  • 1/2 teaspoon ground black pepper;
  • 2 teaspoons salt;
  • 1 cup (240ml) water;
  • 1.3 lbs (600g) cassava root;
  • 1 cup (30g) grated Parmesan cheese;
  • Water, cornstarch, and breadcrumbs for coating.

How to Make Cassava Fritters:

  1. Take the cooked cassava (must be very soft), remove any fibers, and mash it;
  2. In a pan, melt the butter with grated onion and minced garlic;
  3. Add the all-purpose flour and mix well;
  4. Now add the black pepper and salt;
  5. Then pour in the water and bring to a boil;
  6. Stir continuously while boiling;
  7. Add the mashed cassava and combine;
  8. Next, add the grated Parmesan and cook over medium heat for about 5 minutes;
  9. Let it cool;
  10. Spread the mixture on a surface until cool enough to shape the fritters;
  11. You can fill them with your preferred stuffing;
  12. Divide the dough into small pieces;
  13. Flatten each piece in your palm and add your filling;
  14. Seal the edges and shape as desired;
  15. To coat, mix 1/2 cup water with 1 tablespoon cornstarch;
  16. Heat the mixture in the microwave for 30 seconds twice until translucent;
  17. Let it cool, then dip the fritters into the mixture;
  18. Then coat with breadcrumbs and fry in hot oil (350°F/180°C) carefully;
  19. Once golden, drain on paper towels and enjoy!
