- 4 chicken thighs and drumsticks, boneless and cut into large chunks
- 1 onion, diced
- 2 stalks celery, chopped
- 1 carrot, chopped
- 2 potatoes, cubed
- 4 cloves garlic, minced
- 1 bay leaf
- Salt to taste
- Water (or chicken broth)
- Fresh thyme and rosemary to taste
- Lard (or olive oil)
Instructions:
- Prepare the Beans: Cook the soaked beans in a pressure cooker with water, garlic, and bay leaf until tender (do not add salt yet).
- Sear the Meats: In a large heavy-bottomed pot, brown the bacon and sliced sausage until slightly crispy. Remove and set aside. Using the same pot, add a little lard (or oil) and brown the chicken pieces.
- Sauté Vegetables: In the same pot, add the onion, celery, carrot, and garlic. Sauté until the vegetables are softened.
