Chicken Divan is a classic casserole dish packed with creamy, cheesy goodness and a healthy serving of veggies! It’s quick, easy, and makes a fantastic freezer-friendly meal for meal prep.

Ingredients for Chicken and Broccoli Casserole:

  • 2 lbs cooked chicken breast, cubed (seasoned to your preference);
  • 1 large head of broccoli, cut into florets;
  • 1 can (approx. 7 oz) table cream (or heavy cream);
  • 1 can (15 oz) corn, drained;
  • Olive oil or butter for greasing;
  • Salt to taste;
  • Black pepper to taste;
  • Grated Parmesan cheese;
  • Water for boiling.

How to make Chicken and Broccoli Casserole:

  1. Preheat your oven to 400°F (200°C).
  2. Grease a casserole dish or a glass baking dish with olive oil or butter.
  3. Bring a large pot of salted water to a boil.
  4. Add the broccoli florets to the boiling water and blanch for 3–5 minutes until tender-crisp; drain well.
  5. Spread the cooked chicken evenly in the casserole dish.
  6. Layer the blanched broccoli on top of the chicken.
  7. In a blender, pulse the corn and table cream until combined, then pour the mixture over the chicken and broccoli.
  8. Sprinkle generously with grated Parmesan cheese.
  9. Bake for about 20 minutes at 350°F (180°C) until bubbly and golden.
