Ingredients for Chicken and Broccoli Casserole:
- 2 lbs cooked chicken breast, cubed (seasoned to your preference);
- 1 large head of broccoli, cut into florets;
- 1 can (approx. 7 oz) table cream (or heavy cream);
- 1 can (15 oz) corn, drained;
- Olive oil or butter for greasing;
- Salt to taste;
- Black pepper to taste;
- Grated Parmesan cheese;
- Water for boiling.
How to make Chicken and Broccoli Casserole:
- Preheat your oven to 400°F (200°C).
- Grease a casserole dish or a glass baking dish with olive oil or butter.
- Bring a large pot of salted water to a boil.
- Add the broccoli florets to the boiling water and blanch for 3–5 minutes until tender-crisp; drain well.
- Spread the cooked chicken evenly in the casserole dish.
- Layer the blanched broccoli on top of the chicken.
- In a blender, pulse the corn and table cream until combined, then pour the mixture over the chicken and broccoli.
- Sprinkle generously with grated Parmesan cheese.
- Bake for about 20 minutes at 350°F (180°C) until bubbly and golden.
