Ingredients for Cooked Rice Cake:
- 50g Grated Parmesan cheese
- 50g Shredded coconut
- 1 cup Coconut milk
- 1/2 cup (6 fl oz) Milk
- 3 cups Cooked rice
- 4 Eggs
- 1 cup Sugar
- 1/4 cup (50ml) Oil
- 1 tablespoon Baking powder
How to prepare cooked rice cake:
- Preheat oven to 350°F (180°C)
- In a blender, combine all liquid ingredients (coconut milk, milk, eggs, and oil)
- Blend the liquid mixture
- Add cooked rice and sugar, blend until combined
- Transfer to a bowl
- Add Parmesan cheese and shredded coconut, mix with a wooden spoon
- Gently incorporate baking powder
- Prepare a greased cake pan and pour the batter
- Bake for 25 minutes or until a toothpick comes out clean
