Ingredients for Broccoli Mac and Cheese:
- 4 cups elbow macaroni (or your favorite pasta shape);
- 4 cups chicken broth;
- 3/4 tsp garlic powder (or 1 ½ tsp minced fresh garlic);
- 1 tsp salt;
- 1/2 tsp black pepper;
- 2 cups fresh broccoli florets (cut into small, bite-sized pieces);
- 1 cup heavy cream;
- 1 cup whole milk;
- 4 tbsp (1/4 cup) melted butter;
- 3 ½ cups shredded sharp cheddar cheese;
How to make Broccoli Mac and Cheese:
- In a large pot, combine the macaroni, broccoli florets, garlic, salt, and pepper. Stir well to combine;
- Add the chicken broth to the pot and bring to a boil over medium-high heat;
- Once boiling, reduce the heat to low and simmer until most of the liquid has been absorbed;
- Stir occasionally to prevent the pasta from sticking to the bottom of the pot;
- Stir in the melted butter, milk, and heavy cream. Continue to cook for about 5 minutes, or until the pasta is al dente;
- Add the shredded cheddar cheese to the pot;
- Stir constantly for about 2 minutes until the cheese is melted and forms a smooth, creamy sauce;
- Serve immediately. Garnish with fresh parsley if desired, and enjoy!
