This is a wonderful chicken dish that brings an incredible mix of flavors, prepared in under 40 minutes. Creamy Lemon Chicken is today’s recipe!

Ingredients for Creamy Lemon Chicken:

  • 2 tbsp unsalted butter;
  • 1 tbsp extra-virgin olive oil;
  • 4 boneless, skinless chicken breasts;
  • 1 tbsp chicken bouillon (or base);
  • 1/4 cup onion, finely diced;
  • 1/2 tsp red pepper flakes;
  • 1 tbsp fresh cilantro, chopped;
  • 3 tbsp heavy cream;
  • 1 tbsp fresh lemon juice;
  • Lemon slices and fresh cilantro for garnish (optional);
  • 1/4 tsp salt;
  • 1/4 tsp freshly ground black pepper.

How to Prepare Creamy Lemon Chicken:

  1. Preheat your oven to 350°F (175°C);
  2. Ensure the chicken breasts are of uniform thickness. Pound them if necessary;
  3. Season both sides with salt and pepper;
  4. Heat the olive oil in a large skillet over medium-high heat;
  5. Once hot, add the chicken to the skillet and cook for about 6 to 7 minutes, flipping once, until golden brown;
  6. The chicken does not need to be fully cooked through at this stage;
  7. Remove the chicken to a plate and tent with aluminum foil to keep warm;
  8. Remove the skillet from the heat and pour in the chicken bouillon/stock;
  9. Add the lemon juice, onion, cilantro, and red pepper flakes;
  10. Return the skillet to the stove and cook while stirring to scrape up any browned bits from the bottom of the pan;
  11. Bring to a simmer. Cook uncovered for about 10 minutes until the liquid reduces to about 1/4 cup;
  12. Reduce heat to medium-low before stirring in the heavy cream and butter;
  13. Whisk well until the butter has melted;
  14. Place the chicken in a deep baking dish;
  15. Pour the sauce over the chicken and bake in the preheated oven for 5 to 10 minutes, uncovered, until the chicken is cooked through;
  16. Remove from the oven and serve immediately;
  17. Drizzle with extra sauce and garnish with lemon slices and fresh cilantro;
  18. Enjoy!

Tips:

This dish is slightly spicy, but you can adjust the amount of red pepper flakes to suit your taste. You can also substitute heavy cream with whole milk. This recipe takes about 40 minutes to make and serves 4 people. To serve more, simply scale up the ingredients accordingly.
