Everyone knows sweet rice pudding, a staple especially during Brazil’s Festa Junina celebrations. But have you ever heard of or tasted a savory version? This is a traditional recipe from Northeastern Brazil, and I am sure you will love it. Today, we are making creamy milk rice—let’s get cooking!

Ingredients for Creamy Milk Rice:

  • 1 cup long-grain white rice;
  • Salt to taste;
  • 1 2/3 cups (approx. 400ml) water;
  • 1 tablespoon unsalted butter;
  • 1 cup whole milk;
  • Fresh parsley or scallions for garnish (optional).

How to make Creamy Milk Rice:

  1. First, we will cook the rice as usual, but for this specific recipe, we do not use garlic;
  2. In a saucepan, combine the rice, water, and salt;
  3. Bring to a boil and cook until tender, according to your preference;
  4. Once cooked, add the butter while the rice is still very hot;
  5. Stir well to incorporate the butter throughout the rice;
  6. Pour in the milk and stir until creamy;
  7. Let it rest for 5 minutes, and it’s ready to serve;
  8. Transfer to a serving bowl if desired, and garnish with fresh parsley or scallions.

Pro-tips:

There is a popular variation of this recipe that includes cheese. You can stir in grated Parmesan or shredded mozzarella after the rice is finished to make it even richer and creamier.
