Ingredients for Passion Fruit Brigadeiro:
- approx. 1 cup (240g) passion fruit pulp (about 3-4 fresh fruits);
- 1 tbsp granulated sugar;
- 1 can (14 oz / 395g) sweetened condensed milk;
- 7 oz (200g) table cream (or heavy cream);
- 2 tbsp (25g) unsalted butter;
- 1/4 cup (25g) white chocolate chips or chopped bar.
How to Make Passion Fruit Brigadeiro:
- Scoop the pulp from the passion fruits into a blender;
- Pulse briefly (about 30 seconds) just to loosen the seeds without breaking them;
- Strain the juice into a bowl, discarding the seeds;
- Pour the strained juice into a saucepan over medium heat;
- Add the sugar and stir well until it comes to a boil;
- Continue cooking while stirring until it reduces into a thick, jam-like consistency. Remove from heat and set aside;
- In a separate saucepan, combine the condensed milk, table cream, white chocolate, and butter;
- Cook over medium heat, stirring constantly, until the mixture thickens and begins to bubble (the “brigadeiro point”);
- Remove from heat and let both the passion fruit reduction and the brigadeiro cool to room temperature;
- Gently fold the passion fruit reduction into the white brigadeiro until smooth and fully combined;
- Serve immediately, or refrigerate for an hour if you prefer a firmer, spoonable texture.
