- 1/2 cup unsweetened coconut milk or cashew milk;
- 2 tablespoons chia seeds;
- 2 teaspoons sugar (or sweetener of choice);
- Diced mango for topping.
How to Make Chia Seed Pudding:
- Gather all your ingredients;
- Sweeten the milk with the sugar, stirring until completely dissolved;
- Add the chia seeds, stirring very well to ensure they don’t clump together;
- Let it rest for 5 minutes;
- After resting, the mixture will have a jelly-like consistency. Give it another good stir, cover the container, and refrigerate for about 8 hours;
- Once set, it’s ready to serve. Top with diced mango and enjoy!
