Ingredients for the Healthy Open-Faced Esfiha:
Dough:
- 4 medium Russet potatoes;
- Salt to taste;
- 1 tbsp grated Parmesan cheese;
- 2 tbsp melted unsalted butter;
- 1 cup oat flour.
Filling (optional):
- Shredded chicken (seasoned to taste);
- Cream cheese or ricotta, to taste.
How to Prepare Healthy Open-Faced Esfiha:
- Peel the potatoes and cut them into small, even pieces;
- Place them in a pot with salted water and boil until very tender;
- Drain the water and mash the potatoes with the melted butter until smooth;
- Add the grated Parmesan cheese and oat flour to the mash;
- Mix well until fully incorporated into a dough-like consistency;
- Grease a baking sheet with a little extra-virgin olive oil to prevent sticking;
- Take portions of the dough and place them on the baking sheet. Use the back of a spoon to shape them into small discs or circles, slightly flattening the center;
