Ingredients for Lentil Bread:

  • 2 cups cooked lentils
  • 1 cup warm water
  • 1/4 cup extra-virgin olive oil
  • 1 tbsp brown sugar
  • 1 tsp salt
  • 1 tbsp active dry yeast
  • 2 1/2 cups whole wheat flour
  • Pumpkin seeds, to taste (optional, for garnish)

How to Make Lentil Bread:

  1. Start by blending the cooked lentils, warm water, olive oil, brown sugar, and salt in a blender.
  2. Blend until you have a smooth, homogeneous mixture.
  3. In a large bowl, whisk together the whole wheat flour and active dry yeast.
  4. Add the lentil mixture to the flour and stir well until a dough forms.
  5. Knead the dough for about 10 minutes, until it becomes soft and elastic.
  6. If needed, add a little extra flour to reach the right consistency so it doesn’t stick to your hands.
  7. Cover the bowl with a damp cloth and let the dough rest in a warm place for about one hour, or until it has doubled in size.
  8. Preheat your oven to 350°F (180°C).
  9. Once the dough has risen, transfer it to a greased and floured loaf pan. Bake for about 40 minutes, or until golden brown and firm to the touch.
