Ingredients for Oat and Wheat Bread:
- 2 1/2 cups oat flour;
- 1 cup rolled oats;
- 1 cup all-purpose flour;
- 2 tablespoons extra-virgin olive oil;
- 2 tablespoons raw sugar (or demerara sugar);
- 1/2 teaspoon salt;
- 2/3 cup (approx. 150ml) lukewarm milk;
- 1 egg;
- 1 1/4 teaspoons (4g) active dry yeast.
How to make Oat and Wheat Bread:
- In a large bowl, whisk together the egg, lukewarm milk, and sugar;
- Mix well until the sugar is dissolved;
- Add the yeast and mix;
- Add the salt and olive oil;
- Stir in the two cups of oat flour and the cup of rolled oats;
- Mix until well combined;
- Gradually add the all-purpose flour;
- Feel the dough as you go—you may need slightly more or less flour depending on the humidity;
- Knead well with your hands;
- Transfer the dough to a floured surface and knead for about 10 to 15 minutes;
- Return the dough to the bowl, cover with plastic wrap, and let it rest in a warm place for 30 minutes;
- Once rested, place the dough on a floured surface again;
- Press down on the dough with your fingers to deflate it;
- Flatten it slightly and roll it into a loaf shape;
- Place in a loaf pan greased with olive oil and let it rise again for 40 minutes;
- When there are 10 minutes left for the rise, preheat your oven to 400°F (200°C);
- Bake in the preheated oven for about 30 minutes, or until firm and golden brown;
- Turn off the oven and let the bread sit for a few minutes before removing it. Enjoy!
