Ingredients for Homemade Macarons:

  • 3/4 cup granulated sugar;
  • 1/2 cup egg whites (about 3-4 large egg whites);
  • 1 1/4 cups almond flour;
  • 1 cup powdered sugar (confectioners’ sugar);
  • Gel food coloring (optional, in your choice of colors).

How to Make Homemade Macarons:

  1. In a food processor or blender, combine the almond flour and powdered sugar;
  2. Pulse until it becomes a very fine powder, then sift the mixture to remove any large clumps; set aside;
  3. In a small saucepan, whisk together the egg whites and granulated sugar;
  4. Cook over low heat, stirring constantly, until the sugar has completely dissolved into the egg whites;
  5. Transfer the mixture to a stand mixer and beat on high until stiff peaks form, similar to whipped cream;
  6. Gently fold in half of the almond flour mixture;
  7. Use a spatula to fold the mixture carefully from the outside in until well incorporated;
  8. Add the remaining almond flour and continue to fold until the batter is smooth and uniform;
  9. Divide the batter into separate bowls if you wish to create different colors;
  10. Add your desired food coloring and mix gently until the color is consistent;
  11. Prepare a large baking sheet lined with a silicone baking mat or parchment paper;
  12. Transfer the batter to a piping bag fitted with a round tip;
  13. Pipe small, round mounds onto the prepared baking sheet;
  14. Firmly tap the baking sheet against the counter to release any trapped air bubbles;
  15. Let the macarons rest at room temperature for about 10 minutes;
  16. Preheat your oven to 265°F (130°C) and bake for about 10 minutes;
  17. Remove from the oven and let them cool completely before handling;
  18. Gently remove them from the mat and add your favorite filling (such as chocolate ganache, buttercream, or fruit jam);
  19. Sandwich the filling between two macaron shells and enjoy!
