Ingredients for the Healthy Carrot Volcano Mug Cake:

  • 1 egg;
  • 1 small carrot;
  • 1 pinch of salt;
  • 1 tsp coconut oil;
  • 4 tbsp oat flour;
  • 2 tbsp (approx. 30ml) plant-based milk or low-fat milk;
  • 1 tbsp honey or coconut sugar;
  • 4 small squares of bittersweet (dark) chocolate;
  • 1/4 tsp baking powder.

How to Prepare Your Carrot Mug Cake:

  1. In a small bowl, lightly beat the egg and set aside.
  2. Dice the carrot into very small pieces.
  3. Place the chopped carrot in a blender along with the milk and coconut oil.
  4. Blend until smooth.
  5. Pour the liquid mixture into the bowl with the beaten egg and stir well.
  6. Add the honey or coconut sugar and stir again.
  7. Stir in the oat flour until well incorporated.
  8. Finally, gently fold in the baking powder.
  9. Take a mug or a small microwave-safe ramekin.
  10. Grease it with a little coconut oil and a dusting of oat flour.
  11. Pour the batter in and microwave for about 2 minutes.
  12. Check with a toothpick to see if it’s done; if the center is still too wet, add another 30 to 60 seconds. Watch it closely to avoid burning!
  13. Once cooked, run a knife around the edges and carefully invert onto a plate.
  14. While the cake is still warm, make a small hole in the center and insert the chocolate pieces. They will melt from the residual heat. Let it cool slightly and enjoy!
