Lentil Rice with Hard-Boiled Eggs

This Lentil Rice with Hard-Boiled Eggs is an easy, one-pot side dish that’s perfect for a weeknight or your New Year’s table. Simple pantry ingredients come together for a comforting, protein-packed bite.

Ingredients

  • 1 cup long-grain white rice
  • ½ cup dry brown or green lentils (about 3 oz)
  • 1 ½ Tbsp extra-virgin olive oil
  • 1 small yellow onion, finely chopped
  • 1 tsp ground coriander
  • 4 cups boiling water
  • 1 Tbsp kosher salt, plus more to taste
  • 4 hard-boiled eggs, coarsely chopped
  • ¼ cup fresh parsley and scallions, finely chopped

Instructions

  1. Bring a small kettle of water to a boil.
  2. Place lentils in a bowl, cover with the boiling water, and soak 30 minutes; drain.
  3. Heat olive oil in a medium saucepan over medium heat. Add onion and sauté until translucent, about 3 minutes.
  4. Stir in ground coriander and toast 30 seconds, until fragrant.
  5. Add rice and drained lentils; cook 2 minutes, stirring constantly.
  6. Pour in 4 cups boiling water and season with salt. Return to a boil.
  7. Reduce heat to low, cover partially, and simmer 25 minutes, or until rice and lentils are tender and liquid is absorbed.
  8. Remove from heat and let stand, covered, 5 minutes.
  9. Fluff with a fork, fold in chopped eggs and fresh herbs. Serve warm.
