About the Origins of Piedmont Rice:
Piedmont rice originates from the Piedmont region in Italy, where the traditional recipe features rice cooked in meat broth finished with parmesan cheese and butter. Interestingly, while it’s recognized as Italian cuisine, its roots trace back to when Piedmont was part of the Kingdom of Sardinia in the 19th century. During this period, the region’s culinary traditions were heavily influenced by French cuisine, and Piedmont rice may have evolved as an adaptation of the French “risotto alla milanese” – a dish made with rice, butter, saffron, and parmesan cheese. This creamy rice dish perfectly illustrates the French influence on Italian culinary traditions.
