Ingredients for this Skillet Cheese Bread:
- 2 large eggs;
- 1 ¾ cups (approx. 200g) of sour cassava starch (tapioca flour);
- 1 pinch of salt;
- 1 level tablespoon of baking powder;
- ½ cup (50g) of grated Parmesan cheese.
How to make skillet cheese bread:
- In a bowl, beat the eggs well;
- Add the salt and Parmesan cheese, mixing well;
- Add the sour cassava starch and mix again;
- Add the baking powder and knead the mixture with your hands until the dough is smooth and uniform;
- Grease your hands lightly with a little oil;
- Shape the dough into a smooth, round disc;
- Lightly grease a skillet with butter and place the dough inside;
- Press the dough down slightly to fit the shape of the pan;
- Cook over low heat for about 5 minutes;
- Using a plate, flip the bread over. Grease the pan again with butter and cook the other side for another 5 minutes;
- Flip back and forth a second time to ensure it cooks through thoroughly over low heat;
- It’s ready! Brew some fresh coffee and enjoy!

Keep an eye on the size of your eggs. If they are very large, one might be enough. Start with one egg, add the other ingredients, and if the dough feels too dry, add the second egg.
