Tapioca Granola Bar Ingredients:
- 1 bag (14 oz) quick-cook tapioca pearls
- ¾ cup chopped dried apricots
- ½ cup golden seedless raisins
- ½ cup unsweetened shredded coconut
- 2 Tbsp chia seeds
- 1 cup chopped Brazil nuts
- ¾ cup light coconut milk
- 2 cups fat-free milk
- ½ cup honey
How to Make Tapioca Granola Bars:
1 – In a large bowl combine tapioca, apricots, raisins, coconut, chia and nuts.
2 – In a saucepan bring coconut milk, fat-free milk and honey to a gentle boil.
3 – Gradually pour the hot liquid over the dry mix, stirring after each addition until evenly moistened.
4 – Press into a parchment-lined 9×13-inch pan and smooth the top with a spatula.
5 – Cover with plastic wrap and refrigerate at least 12 hours to set.
6 – Cut into bars. Store refrigerated up to 1 week, or wrapped in cellophane at room temperature up to 4 days.
