Ingredients for these Lemon Brownies:
Brownie Batter:
- 1/2 cup unsalted butter, softened;
- 3/4 cup all-purpose flour;
- 2 large eggs;
- 2 tablespoons lemon zest;
- 2 tablespoons lemon juice;
- 3/4 cup granulated sugar;
- 1/4 teaspoon sea salt.
Glaze:
- 4 tablespoons lemon juice;
- 8 teaspoons lemon zest;
- 1 cup powdered sugar.
How to make Lemon Brownies:
Brownie Batter:
- Preheat your oven to 350°F (175°C);
- Grease an 8×8 inch baking pan with butter;
- Prepare the lemons: juice and zest them;
- In a bowl, combine the flour, softened butter, sugar, and salt;
- Beat until well incorporated;
- In another bowl, whisk together the eggs, lemon juice, and lemon zest;
- Beat again to mix (you can do this by hand or with a hand mixer);
- Combine the flour mixture with the egg mixture and beat until smooth, about 2 minutes;
- Transfer the batter to the prepared pan and spread evenly;
- Bake in the preheated oven for about 25 minutes or until a toothpick comes out clean;
- Remove from the oven and let it cool completely at room temperature.
Glaze:
- In a bowl, mix the powdered sugar, lemon juice, and lemon zest;
- Stir well to combine;
- Spread the glaze over the cooled brownie;
- Allow the glaze to set for a few minutes, then cut into small bars if desired. Enjoy!
Pro Tip:
You can use either Persian limes or Meyer lemons, depending on your preference or what you have on hand. Both will taste fantastic.
