Classic French Onion Soup

Today we’re making a warm, comforting dish perfect for rainy days or a cozy Friday night paired with a glass of wine. We’re cooking up a classic French Onion Soup—let’s get started!

Ingredients for French Onion Soup:

  • ¼ cup butter, melted;
  • 1 large yellow onion, thinly sliced;
  • 1 small red onion, thinly sliced;
  • 2 cloves garlic, minced;
  • 4 cups beef broth;
  • 3 tablespoons brandy (or cognac);
  • 2 teaspoons soy sauce;
  • Salt and freshly ground black pepper to taste;
  • Toasted baguette slices;
  • 3 slices Provolone cheese (or Gruyère for a more traditional touch);

How to make French Onion Soup:

  1. Place a large pot or Dutch oven over medium heat.
  2. Add the butter and let it melt.
  3. Add the yellow and red onions and sauté for about 10 minutes, or until soft and translucent.
  4. Add the minced garlic and sauté for another 2 minutes until fragrant.
  5. Pour in the beef broth, soy sauce, and brandy.
  6. Season with salt and pepper to taste. Let it simmer to allow flavors to meld.
  7. Preheat your oven’s broiler (or heat your oven to 350°F).
  8. Ladle the soup into oven-safe bowls.
  9. Top each bowl with a toasted baguette slice and a slice of Provolone cheese.
  10. Place under the broiler for about 3 minutes, or until the cheese is melted, bubbly, and golden brown.
  11. Carefully remove from the oven and serve immediately.
