Tangerine Peel Cake Recipe

Today for our afternoon coffee, we are going to prepare a very unique treat: Tangerine Peel Cake. Once you try it, you’ll want to make it all the time. It reminds many of a classic orange cake, but with a distinct, sophisticated citrus flavor profile all its own.

Ingredients for Tangerine Peel Cake:

  • Peels from 3 to 4 medium tangerines (thoroughly washed);
  • 1 cup granulated sugar;
  • 2 cups all-purpose flour;
  • 3 large eggs (separated);
  • 1 tablespoon honey;
  • 1/2 cup vegetable oil;
  • 1 tablespoon baking powder;
  • 3 to 4 cups water (for boiling peels).

How to make Tangerine Peel Cake:

  1. Place the cleaned tangerine peels and water in a saucepan over medium heat.
  2. Once it starts to boil, remove from heat. Let it cool slightly, then blend the mixture in a blender until smooth.
  3. Strain the liquid and set aside.
  4. In a clean blender, combine the egg yolks, sugar, honey, oil, and the tangerine peel liquid. Blend until well combined and set aside.
  5. In a separate bowl, beat the egg whites until stiff peaks form, and set aside.
  6. Whisk the baking powder into the flour. Gradually incorporate the liquid mixture into the dry ingredients.
  7. Once the batter is smooth, gently fold in the beaten egg whites until fully incorporated.
  8. Grease a cake pan and pour in the batter.
  9. Bake in a preheated oven at 350°F (180°C) for about 40 minutes.
  10. All done! Enjoy your delicious treat.
