  • ¾ cup heavy cream (or table cream);
  • 2 tsp unsalted butter;
  • 1 large Persian lime (zested and juiced);
  • Granulated sugar for rolling.

How to make Lemon Brigadeiro:

  1. First, zest the lime (avoiding the white pith) and set the zest aside.
  2. Juice the lime.
  3. Add the lime juice to a small saucepan over medium heat and reduce it until it thickens slightly. Remove from heat and set aside.
  4. In a separate saucepan, add the condensed milk, heavy cream, and butter.
  5. Cook over low-to-medium heat, stirring constantly.
  6. When the mixture begins to pull away from the bottom of the pan, add the reduced lime juice and most of the zest (reserve some for garnish).
  7. Continue stirring until the mixture pulls away completely from the bottom of the pan, then remove from heat.
  8. Stir for a moment off the heat, then transfer to a plate. Let it cool completely at room temperature.
  9. Once cooled, grease your hands with butter, roll portions into balls, and coat them in granulated sugar. Garnish with the remaining lime zest to taste.
  10. Place in the refrigerator to firm up before serving.
