  • 3/4 cup demerara sugar (or organic cane sugar);
  • Coconut oil (for greasing your hands);
  • Vegan chocolate sprinkles for decoration (optional).

How to make vegan brigadeiro:

  1. First, process the cooked taro with the rice milk in a food processor or blender until smooth;
  2. Next, add the cornstarch, rice flour, and cocoa powder, and pulse to combine;
  3. Transfer the mixture to a saucepan;
  4. Stir in the demerara sugar;
  5. Cook over low heat, stirring constantly until the mixture thickens and easily pulls away from the bottom of the pan;
  6. Transfer the mixture to a plate and refrigerate for 3 hours (or until firm enough to roll);
