Add 2 tablespoons (20ml) of olive oil and mix until a sticky dough forms. Cover and let rest for 5 minutes. Perform 4 to 5 sets of “stretch and folds” every 5 minutes to build structure.
  3. Cover and let the dough rise for 30 to 60 minutes until doubled in size.
  4. Generously grease a baking sheet or 9×13-inch pan with olive oil. Gently transfer the dough to the pan and stretch it carefully to cover the surface.
  5. Use your fingers to poke deep dimples all over the dough. Scatter fresh rosemary over the top, sprinkle with coarse sea salt, and drizzle with the remaining olive oil.
  6. Bake in a preheated oven at 400°F (200°C) for about 25 minutes, or until golden brown and crispy.
  7. Let the focaccia cool on a wire rack for 15 minutes before slicing.
