Ingredients for the Chocolate Mousse Cake:
- 3 Large eggs
- 3/4 cup sugar (your preferred type)
- 2 tablespoons all-purpose flour
- 1 1/4 cups milk (your preferred type)
- 4 tablespoons unflavored gelatin powder
- 1 1/4 cups heavy cream (or canned, avoid carton versions)
- 3 1/2 ounces white chocolate
- 3 1/2 ounces milk chocolate
- 3 1/2 ounces dark chocolate
- 3/4 cup sugar
How to Prepare the Chocolate Mousse Cake:
- In a pot, mix egg yolks with 3/4 cup sugar and 2 tablespoons flour
- In another pot, bring milk to a boil
- Combine the yolk mixture with the milk, cook over medium heat
- Cook, stirring constantly, until thickened; set aside
- Hydrate the gelatin with 4 tablespoons water
- Heat in microwave for 20 seconds and add to the previous mixture
- Let cool while stirring occasionally to prevent skin formation
- Whip cream until stiff and mix into the cooled mixture
- Melt chocolates individually
- Divide the cream into 3 equal portions and add to each chocolate type
- Beat egg whites until stiff peaks form
- Add 3/4 cup sugar and whip into a stiff meringue
- Divide meringue into 3 parts and combine gently with each chocolate type
- Line a mold with aluminum foil
- Add white chocolate layer, level, and chill for 20 minutes
- Add milk chocolate layer, chill for another 20 minutes
- Finish with dark chocolate layer and chill for 2 hours
