Ingredients for Cassava Casserole with Dried Beef
- 2 Pounds of peeled, boiled cassava with salt
- 1 Cup (8 fl oz) milk
- 3 Cups (24 oz) cream cheese
- 1 Cup (85g) grated Parmesan cheese
- 1 Cup (240ml) olive oil
- 2 Pounds of salted dried beef, boiled and shredded
- 2 Onions, sliced
- ½ Cup (40g) chopped parsley
- 2 Tbsp unsalted butter
How to Prepare Cassava Casserole
- Preheat oven to 375°F (190°C)
- Heat olive oil in a large skillet
- Add salted beef and onions, sauté until slightly browned
- Stir in chopped parsley and set aside
- In a separate bowl, mash boiled cassava
- Add milk, cream cheese, and butter until smooth
- In a greased casserole dish, layer half the cassava puree
- Spread the salted beef mixture
- Top with remaining cassava puree
- Sprinkle grated Parmesan cheese
- Bake for 25-30 minutes until golden and bubbly
- Let rest 10 minutes before serving
