- Dried oregano to taste;
- 4 cups vegetable broth.
How to make Brie Cheese Risotto:
- Start by heating your vegetable broth in a separate saucepan and keep it warm over low heat throughout the process.
- In a large pan, sauté the chopped onion in olive oil until it becomes translucent.
- Add the Arborio rice and toast it with the onion until the edges of the grains begin to look translucent.
- Pour in the white wine, stir well, and let the alcohol evaporate.
- Reduce the heat to low and begin adding the hot vegetable broth, one ladle at a time.
- Stir constantly. Add more broth only after the previous portion has been fully absorbed by the rice. Continue until the grains are “al dente.”
- Add the chopped Brie cheese and stir gently until it melts and incorporates into the rice, creating a rich, creamy texture.
- All done! If you like, finish with a sprinkle of oregano and serve hot.
