Ingredients for Rustic Baked Potatoes:

  • 8 Purple-skinned potatoes
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1 tsp toasted garlic powder
  • 2 tbsp olive oil
  • Salt to taste

How to Make Rustic Baked Potatoes:

  1. Rinse potatoes thoroughly
  2. Leave skins on and slice into 3/4″ thick canoe-shaped pieces
  3. Blanch in boiling water just until slightly softened
  4. In a bowl, coat with olive oil
  5. Add all spices and toss to combine
  6. Season with salt
  7. Arrange skin-side down in baking dish
  8. Bake at 425°F (220°C) until golden and crispy
  9. Transfer to serving bowl with decorative presentation

Serving Suggestions:
