Soft Pumpkin Bread Recipe

Ingredients for Pumpkin Bread:

  • 300g of cooked pumpkin;
  • 500g of all-purpose flour;
  • 150ml (2/3 cup) of milk;
  • 1 Egg;
  • 1 Tablespoon of melted butter;
  • 1 Tablespoon of vanilla extract;
  • 2 Tablespoons of sugar;
  • ½ Teaspoon of salt;
  • 10g of active dry yeast.

How to Prepare Pumpkin Bread:

  1. In a blender, add milk, vanilla extract, egg, salt, and sugar;
  2. Add cubed cooked pumpkin (peeled), squeezing out excess moisture, to the blender;
  3. Blend on high speed for 2 minutes;
  4. In a bowl, mix flour and yeast;
  5. Pour in the blender mixture;
  6. Add the melted butter and mix well;
  7. Gradually add more flour while kneading by hand;
  8. Knead on a floured surface until smooth and elastic;
  9. Place dough in a greased bowl, cover, and let rest for 40 minutes;
  10. On a floured surface, roll out the dough;
  11. Roll into a log;
  12. Cut into small loaves or shape into one loaf;
  13. Place in a greased pan, dust with flour, and let rest 20-25 minutes;
  14. Bake at 400°F (200°C) for 25-35 minutes until golden brown;
  15. Brush with butter and enjoy with coffee. Bon appétit!
