- 2 cups raw sweet potato, peeled and cubed;
- 2 cups all-purpose flour;

- approx. 7 oz (200ml) whole milk;
- 3 large eggs;
- 3 tablespoons unsalted butter, melted;
- 1 cup granulated sugar.
How to Make Sweet Potato Cake:
- In a blender, combine the raw sweet potato cubes, milk, eggs, sugar, and melted butter;
- Blend on high until the mixture is completely smooth;
- Pour the mixture into a large mixing bowl;
- Gradually stir in the sifted flour, mixing well until the batter is smooth and fully incorporated;
- Gently fold in the baking powder until just combined;
- Grease a cake pan and pour the batter in;
- Bake in a preheated oven at 350°F (180°C) for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean;
