Homemade Sweet Potato Cake Recipe

Ingredients for Sweet Potato Cake:

  • 2 cups raw sweet potato, peeled and cubed;
  • 2 cups all-purpose flour;
  • 1 tablespoon baking powder;
  • approx. 7 oz (200ml) whole milk;
  • 3 large eggs;
  • 3 tablespoons unsalted butter, melted;
  • 1 cup granulated sugar.

How to Make Sweet Potato Cake:

  1. In a blender, combine the raw sweet potato cubes, milk, eggs, sugar, and melted butter;
  2. Blend on high until the mixture is completely smooth;
  3. Pour the mixture into a large mixing bowl;
  4. Gradually stir in the sifted flour, mixing well until the batter is smooth and fully incorporated;
  5. Gently fold in the baking powder until just combined;
  6. Grease a cake pan and pour the batter in;
  7. Bake in a preheated oven at 350°F (180°C) for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean;
  8. Allow the cake to cool slightly before unmolding. Enjoy!
