Ingredients for the Coconut Sweet Bread:

Dough:

  • 1 cup butter, softened;
  • 3 eggs;
  • approx. 7 to 8 cups all-purpose flour (approx. 1kg);
  • 2 tablespoons active dry yeast;
  • 1 1/2 cups warm water;
  • 1 can (14 oz) sweetened condensed milk.

Filling:

  • 2 cups shredded coconut (unsweetened or sweetened, based on preference);
  • 1/2 cup coconut milk;
  • 1 egg yolk, beaten;
  • 3 tablespoons sugar.

How to Make Coconut Sweet Bread:

Dough:

  1. In a large bowl, whisk together the eggs, yeast, water, and sweetened condensed milk;
  2. Mix well, then gradually add the flour until a dough forms;
  3. Knead the dough until it is smooth, soft, and no longer sticks to your hands;
  4. Cover and let it rise for about 30 minutes.

Filling:

  1. In a small bowl, combine the shredded coconut, coconut milk, egg yolk, and sugar;
  2. Mix until well incorporated and set aside.

Assembly:

  1. Divide the dough into two parts;
  2. Roll out one part on a floured surface using a rolling pin, then spread half of the filling evenly;
  3. Carefully roll it up into a log (or braid it if preferred);
  4. Transfer to a greased and floured baking pan;
  5. Repeat the process with the second half of the dough;
  6. Brush the tops of the loaves with a little extra egg yolk for a beautiful golden color;
  7. Let them rise again for about 25 minutes;
  8. Bake in a preheated oven at 350°F (180°C) for about 40 minutes. Let it cool slightly before serving. Enjoy!

Pro Tip:

For an extra touch of sweetness, make a simple glaze: mix 1 cup powdered sugar with 3 tablespoons coconut milk and drizzle over the bread as soon as it comes out of the oven. It makes the bread even softer and more delicious!
