Mouthwatering Vegan Lasagna: A Simple Step-by-Step Guide

Ingredients for the vegan lasagna:

Noodles:

  • 12 vegan lasagna noodle sheets;

Filling:

  • 2 medium onions, diced;
  • 2 cloves of garlic, minced;
  • Vegetable oil for sautéing;
  • Salt and oregano to taste;
  • Fresh basil leaves, chopped;

White Sauce:

  • 2 cans (13.5 oz each) coconut milk;
  • 3 tablespoons all-purpose flour;
  • Salt to taste.

How to make vegan lasagna:

  1. Preheat your oven to 350°F (180°C);
  2. In a pan, heat a little vegetable oil over medium heat;
  3. Add the diced onions and minced garlic, sautéing until soft and lightly golden;
  4. Season the sautéed onion and garlic with salt and oregano to taste;
  5. Add the chopped fresh basil leaves and mix well. Set aside;
  6. For the white sauce, use a separate pan, add the coconut milk, and bring to medium heat;
  7. In a separate bowl, dissolve the flour in a little water to form a smooth paste;
  8. Add the flour paste to the warm coconut milk, whisking constantly to prevent lumps;
  9. Cook the white sauce over medium-low heat, stirring constantly, until it thickens;
  10. Season with salt to taste and set aside;
  11. In a baking dish, assemble the lasagna by alternating layers of noodles, onion and garlic filling, and white sauce;
  12. Repeat the layers until the ingredients are finished, ending with a layer of white sauce or noodles—the choice is yours;
  13. Cover the dish with aluminum foil and bake in the preheated oven for about 40 minutes;
  14. Remove the foil and bake for another 10 to 15 minutes, or until the noodles are fully cooked and the top is golden;
  15. Remove from the oven and let it rest for a few minutes before serving;
  16. Enjoy!
