Ingredients for orange cornmeal cake:

  • 2 US cups cornmeal;
  • 2 US cups sugar;
  • 1 US cup all-purpose flour;
  • 1 tbsp baking powder;
  • 4 eggs;
  • 1 US cup oil;
  • 1 US cup fresh orange juice.

How to prepare orange cornmeal cake:

  1. In a bowl, sift cornmeal, sugar, and all-purpose flour. Set aside;
  2. In a blender, beat eggs, oil, and orange juice until smooth;
  3. Remove the blender lid center and slowly add sifted dry ingredients while blending;
  4. Blend for 5 minutes;
  5. Add baking powder and mix with a spoon;
  6. Pour batter into a greased and floured pan;
  7. Bake at 350°F (180°C) for 40 minutes;
  8. Let cool slightly before serving. Enjoy!
