Ingredients for Sheet Pan Omelet:
- 4 Eggs;
- Grated Parmesan cheese to taste;
- Mozzarella to taste;
- Your choice of filling (I used pre-seasoned, pre-cooked shredded chicken);
- Parsley and green onions to taste;
- Salt and black pepper to taste.
How to prepare sheet pan omelet:
- Using a stand mixer, beat 4 egg whites until stiff peaks form;
- Add egg yolks and grated Parmesan;
- Beat briefly;
- Turn off mixer and add filling and seasonings, then mix;
- Pour egg mixture into greased baking dish;
- Add remaining filling, mozzarella, and the rest of eggs;
- Sprinkle mozzarella and drizzle with olive oil;
- Bake at 350°F (180°C) for 30 minutes and serve.
