Ingredients for the Vegetable Frittata:

  • 3 Tablespoons olive oil;
  • 1 Medium onion;
  • 1 Clove garlic;
  • 1 Teaspoon sweet paprika;
  • 4 Peeled and cubed potatoes;
  • Salt to taste;
  • ½ Cup shredded cabbage;
  • 1 Small grated carrot;
  • ½ Cup chopped green bell pepper;
  • ½ Cup chopped yellow bell pepper;
  • ½ Cup chopped red bell pepper;
  • 3 Whole eggs;
  • 3/4 Cup milk;
  • 1 Cup plain yogurt;
  • 1/4 Cup oil;
  • Fresh parsley to taste;
  • 1 Pinch black pepper;
  • 3 Tablespoons all-purpose flour;
  • 1 Tablespoon baking powder;
  • 200g chopped mozzarella cheese.

How to Prepare the Vegetable Frittata:

  1. Start by sautéing the onion in a skillet;
  2. When the onion turns translucent, add the paprika and mix well;
  3. Now add the potatoes;
  4. Let them sauté slightly (on low heat);
  5. Next add the carrot and cabbage, mixing well;
  6. Add the three chopped bell peppers, mix, adjust salt, and set aside;
  7. In a bowl, beat the eggs until smooth;
  8. Add the milk and yogurt, mixing thoroughly;
  9. Now add the parsley, salt, and black pepper to taste, and combine;
  10. Add the oil and mix;
  11. Now add the flour and mix until dissolved;
  12. Add the baking powder and mix gently;
  13. Finally, add the prepared vegetable mixture and combine everything;
  14. Pour into a greased pan and spread the chopped mozzarella on top;
  15. Bake in a preheated oven at 350°F for about 25 minutes or until golden and passes the toothpick test;
