Today we’re making a salted cod pie for lunch. If you love cod, you’ll adore this recipe – it’s incredible and versatile, perfect as a main dish for lunch, dinner, or even as a late-night snack. Let’s get started!
Ingredients for the salted cod pie:
- 3 Yellow onions
- 2 Cloves of garlic
- 1 Cup (160g) extra-virgin olive oil
- Nutmeg to taste
- 2.2 lbs Salted cod
- 2.2 lbs Russet potatoes
- 2 Cans of heavy cream
- Grated Parmesan cheese to taste
How to make the salted cod pie:
- Soak the salted cod in the refrigerator for 24 hours
- Change the water 3-4 times to remove the salt
- Boil the cod until tender
- Remove the bones and skin
- Shred the cod to your preferred size
- Cook the potatoes (you can use the cod cooking water)
- Mash the potatoes into a puree
- Sauté finely chopped onions
- Add crushed garlic to the onions in a pan with plenty of olive oil
- Mix the mashed potatoes, shredded cod, and onion-garlic mixture
- Add a pinch of nutmeg and mix well
- Stir in the heavy cream
- Transfer to a greased baking dish
- Top generously with grated Parmesan and bake until golden and bubbly
