Ingredients for Sheet Pan Omelet:

  • 4 Eggs;
  • Grated Parmesan cheese to taste;
  • Mozzarella to taste;
  • Your choice of filling (I used pre-seasoned, pre-cooked shredded chicken);
  • Parsley and green onions to taste;
  • Salt and black pepper to taste.

How to prepare sheet pan omelet:

  1. Using a stand mixer, beat 4 egg whites until stiff peaks form;
  2. Add egg yolks and grated Parmesan;
  3. Beat briefly;
  4. Turn off mixer and add filling and seasonings, then mix;
  5. Pour egg mixture into greased baking dish;
  6. Add remaining filling, mozzarella, and the rest of eggs;
  7. Sprinkle mozzarella and drizzle with olive oil;
  8. Bake at 350°F (180°C) for 30 minutes and serve.

Customization Tips:

You can use any filling you prefer. For meats or seafood, prepare them before assembly.
