Ingredients for the healthy rice beijinho:

  • ½ cup raw white rice;
  • 2 cups water (to cook the rice);
  • 1 cup water (to blend with the cooked rice);
  • 1 cup sugar;
  • 3.5 oz (approx. 1 cup) shredded coconut;
  • Whole cloves (optional, for garnish).

How to make the rice beijinho:

  1. In a saucepan, add the rice and the 2 cups of water;
  2. If you’d like an extra hint of spice, add a clove while cooking;
  3. Cook over medium heat until soft;
  4. Once cooked, remove the clove. Transfer the cooked rice to a blender and add the remaining 1 cup of water;
  5. Add the sugar to the blender and cover;
  6. Blend until smooth and well combined;
  7. Pour the mixture into a saucepan over medium-high heat;
  8. Add 1.75 oz (approx. 1/2 cup) of the shredded coconut. Stir constantly until the mixture pulls away from the bottom of the pan, similar to the consistency of a Brazilian brigadeiro;
  9. Let it cool completely;
  10. Shape into small balls and roll them in the remaining shredded coconut;
  11. Garnish with a whole clove if desired;
  12. All done. Enjoy!

Pro Tip:

You can turn these into “prestígio” bites by dipping them in melted dark chocolate. Place them in the refrigerator until the chocolate sets perfectly.
