- Green onions, chopped to taste;
- 1 cup bean sprouts;
- Broccoli florets, to taste;
- 2 cloves garlic, minced;
- 2 teaspoons cornstarch (dissolved in a little water);
- Soy sauce, to taste;
- Vegetable oil, for frying;
- Salt, to taste.
How to Prepare Chicken Chow Mein:
- Using a non-stick skillet or wok, heat a tablespoon of oil over medium-high heat.
- Sauté the vegetables and minced garlic for about 2 to 3 minutes until tender-crisp.
- Remove the vegetables from the pan and set aside.
- In the same clean pan, cook the chicken cubes until they are golden brown and fully cooked through.
- Remove the chicken from the pan and set aside.
- In a separate large pot, bring about 3 quarts of water to a boil.
- Add the noodles and cook according to the package instructions (usually about 4 to 5 minutes maximum).
- Drain the noodles and immediately rinse with cold water to stop the cooking process and prevent them from sticking.
- Return the noodles to the pan with enough vegetable oil to coat the bottom, and stir-fry for about 4 minutes, tossing constantly to keep them from sticking.
- Add the sautéed vegetables, cooked chicken, and about 6 tablespoons of soy sauce.
- Toss everything together over medium heat for about 5 minutes, ensuring the sauce coats everything evenly without sticking to the bottom.
- Serve warm in a bowl and enjoy your homemade meal!
