Easy Chicken Chow Mein Recipe

Today we’re making a delicious classic that’s a total throwback—if you’re a fan of early 2000s TV like The O.C., this comfort food staple will surely bring back some memories. We’re whipping up a quick and easy chicken chow mein, so let’s get started!

Ingredients for Homemade Chicken Chow Mein:

  • 1 lb (approx. 500g) chow mein noodles or yakisoba-style noodles;
  • 2.2 lbs (1kg) chicken breast, cut into bite-sized cubes (season to your preference);
  • 1 cup carrot, julienned (cut into thin strips);
  • Green onions, chopped to taste;
  • 1 cup bean sprouts;
  • Broccoli florets, to taste;
  • 2 cloves garlic, minced;
  • 2 teaspoons cornstarch (dissolved in a little water);
  • Soy sauce, to taste;
  • Vegetable oil, for frying;
  • Salt, to taste.

How to Prepare Chicken Chow Mein:

  1. Using a non-stick skillet or wok, heat a tablespoon of oil over medium-high heat.
  2. Sauté the vegetables and minced garlic for about 2 to 3 minutes until tender-crisp.
  3. Remove the vegetables from the pan and set aside.
  4. In the same clean pan, cook the chicken cubes until they are golden brown and fully cooked through.
  5. Remove the chicken from the pan and set aside.
  6. In a separate large pot, bring about 3 quarts of water to a boil.
  7. Add the noodles and cook according to the package instructions (usually about 4 to 5 minutes maximum).
  8. Drain the noodles and immediately rinse with cold water to stop the cooking process and prevent them from sticking.
  9. Return the noodles to the pan with enough vegetable oil to coat the bottom, and stir-fry for about 4 minutes, tossing constantly to keep them from sticking.
  10. Add the sautéed vegetables, cooked chicken, and about 6 tablespoons of soy sauce.
  11. Toss everything together over medium heat for about 5 minutes, ensuring the sauce coats everything evenly without sticking to the bottom.
  12. Serve warm in a bowl and enjoy your homemade meal!
